Ingredients (Makes 18–20 Cookies)

Dry Ingredients

  • 2 cups fine blanched almond flour
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown-style keto sweetener (erythritol/monk fruit blend)
  • 1/4 cup powdered keto sweetener
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract

Mix-Ins

  • 3/4 cup sugar-free chocolate chips
  • Optional: 1/4 cup chopped pecans or walnuts

Preparation Time

Prep time: 15 minutes
Bake time: 10–12 minutes
Total time: 30 minutes


Step-by-Step Instructions

Step 1: Preheat Oven

Preheat oven to 350°F (175°C).

Line a baking sheet with parchment paper.


Step 2: Cream Butter and Sweeteners

In a mixing bowl, beat:

  • Softened butter
  • Brown-style keto sweetener
  • Powdered sweetener

Beat for 2–3 minutes until light and fluffy.

Why this matters: Creaming incorporates air, giving lighter texture.


Step 3: Add Egg and Vanilla

Mix in egg and vanilla extract until fully combined.

Scrape down sides of bowl to ensure even mixing.


Step 4: Combine Dry Ingredients

In a separate bowl, whisk:

  • Almond flour
  • Coconut flour
  • Baking soda
  • Salt

Gradually add dry ingredients into wet mixture.

Mix until a soft dough forms.

Let dough rest 5 minutes to allow coconut flour to absorb moisture.


Step 5: Fold in Chocolate Chips

Gently stir in sugar-free chocolate chips.

If dough feels too soft, chill for 10–15 minutes.


Step 6: Shape Cookies

Scoop about 1 1/2 tablespoons dough per cookie.

Roll into balls and place on baking sheet.

Flatten slightly with your palm (they do not spread much on their own).

Leave space between cookies.


Step 7: Bake

Bake 10–12 minutes until:

  • Edges turn golden brown
  • Centers look slightly soft

Do not overbake. They will firm up as they cool.


Step 8: Cool Properly

Allow cookies to cool on baking sheet for 10 minutes.

Transfer to wire rack.

Cookies will be fragile while warm but set as they cool.

Bake 10 minutes and slightly underbake center.

Bake 12–14 minutes.

Add 1 tablespoon heavy cream to dough.
