Finishing Touches
- 1 tablespoon soy sauce or tamari (optional)

Preparation Steps
Step 1: Preparing the Hungrain
- Rinse the hungrain thoroughly under running water until the water runs clear.
- Soak the hungrain in clean water for at least 30 minutes.
This helps reduce cooking time and improves texture.
- Drain the water and set the hungrain aside.
Step 2: Cooking the Hungrain
- In a medium saucepan, add the soaked hungrain and 2½ cups of water or vegetable stock.
- Add the bay leaf and a small pinch of salt.
- Bring to a boil, then reduce the heat to low.
- Cover and simmer for 20–25 minutes, or until the grains are tender and the water is absorbed.
- Turn off the heat and let it rest, covered, for 5 minutes.
- Fluff gently with a fork and remove the bay leaf.
Step 3: Preparing the Mushrooms
- Clean mushrooms using a damp cloth or rinse quickly under water and pat dry.
- Slice them evenly to ensure uniform cooking.
- Set aside.
Step 4: Building the Flavor Base
- Heat oil or butter in a large pan over medium heat.
- Add chopped onions and sauté until soft and golden.
- Add garlic and sauté for 30 seconds until fragrant.
- Add carrots and cook for 2 minutes.
- Add bell peppers and green beans or peas.
- Cook for another 2–3 minutes until slightly softened.
Step 5: Cooking the Mushrooms
- Add the sliced mushrooms to the pan.
- Spread them evenly and let them cook without stirring for 2 minutes.
- Stir gently and continue cooking until they release moisture and begin to brown.
- Add chopped tomatoes and mix well.
- Cook until the tomatoes soften and blend into the mixture.
Step 6: Adding Spices
- Lower the heat.
- Add cumin powder, coriander powder, black pepper, paprika or chili powder, and dried herbs.
- Mix well and cook for 1 minute to bloom the spices.
Step 7: Combining Hungrain and Mushrooms
- Add the cooked hungrain to the mushroom mixture.
- Gently fold everything together so the grains are coated with flavor.
- Add soy sauce if using.
- Taste and adjust salt and seasoning.
- Cook on low heat for 3–5 minutes, stirring occasionally.
Step 8: Final Touches
- Turn off the heat.
- Add lemon juice or vinegar to brighten the flavor.
- Sprinkle fresh herbs on top.
- Let the dish rest for 2 minutes before serving.
