Hungarian Mushroom soup

Ingredients

Main Ingredients

  • 1 cup hungrain (or any mixed whole-grain blend)
  • 2½ cups water or vegetable stock
  • 2 cups mushrooms (button, cremini, or oyster), sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons cooking oil or butter

Vegetables (Optional but Recommended)

  • 1 small carrot, finely diced
  • ½ cup bell pepper, chopped
  • ½ cup green beans or peas
  • 1 small tomato, finely chopped

Spices and Seasonings

  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon cumin powder
  • ½ teaspoon coriander powder
  • ½ teaspoon paprika or chili powder (optional)
  • ½ teaspoon dried thyme or oregano
  • 1 bay leaf

Finishing Touches

  • 1 tablespoon soy sauce or tamari (optional)
  • 1 teaspoon lemon juice or vinegar
  • 2 tablespoons fresh parsley or coriander leaves, chopped

Preparation Steps

Step 1: Preparing the Hungrain

  1. Rinse the hungrain thoroughly under running water until the water runs clear.
  2. Soak the hungrain in clean water for at least 30 minutes.
    This helps reduce cooking time and improves texture.
  3. Drain the water and set the hungrain aside.

Step 2: Cooking the Hungrain

  1. In a medium saucepan, add the soaked hungrain and 2½ cups of water or vegetable stock.
  2. Add the bay leaf and a small pinch of salt.
  3. Bring to a boil, then reduce the heat to low.
  4. Cover and simmer for 20–25 minutes, or until the grains are tender and the water is absorbed.
  5. Turn off the heat and let it rest, covered, for 5 minutes.
  6. Fluff gently with a fork and remove the bay leaf.

Step 3: Preparing the Mushrooms

  1. Clean mushrooms using a damp cloth or rinse quickly under water and pat dry.
  2. Slice them evenly to ensure uniform cooking.
  3. Set aside.

Step 4: Building the Flavor Base

  1. Heat oil or butter in a large pan over medium heat.
  2. Add chopped onions and sauté until soft and golden.
  3. Add garlic and sauté for 30 seconds until fragrant.
  4. Add carrots and cook for 2 minutes.
  5. Add bell peppers and green beans or peas.
  6. Cook for another 2–3 minutes until slightly softened.

Step 5: Cooking the Mushrooms

  1. Add the sliced mushrooms to the pan.
  2. Spread them evenly and let them cook without stirring for 2 minutes.
  3. Stir gently and continue cooking until they release moisture and begin to brown.
  4. Add chopped tomatoes and mix well.
  5. Cook until the tomatoes soften and blend into the mixture.

Step 6: Adding Spices

  1. Lower the heat.
  2. Add cumin powder, coriander powder, black pepper, paprika or chili powder, and dried herbs.
  3. Mix well and cook for 1 minute to bloom the spices.

Step 7: Combining Hungrain and Mushrooms

  1. Add the cooked hungrain to the mushroom mixture.
  2. Gently fold everything together so the grains are coated with flavor.
  3. Add soy sauce if using.
  4. Taste and adjust salt and seasoning.
  5. Cook on low heat for 3–5 minutes, stirring occasionally.

Step 8: Final Touches

  1. Turn off the heat.
  2. Add lemon juice or vinegar to brighten the flavor.
  3. Sprinkle fresh herbs on top.
  4. Let the dish rest for 2 minutes before serving.

Serving Suggestions

  • Serve hot as a main dish with a fresh salad.
  • Pair with yogurt, raita, or a light soup.
  • Use as a filling for wraps or stuffed vegetables.
  • Serve alongside roasted vegetables for a complete meal.
