Main Ingredients
Fresh Lemon Juice

Fresh lemons are strongly recommended because bottled lemon juice can taste harsh or flat.
Honey
- 1/3 cup raw honey
Choose a mild honey if you want a lighter flavor.
Choose darker honey for deeper richness.
Turmeric
- 1 tablespoon turmeric powder
For stronger turmeric flavor and color, use fresh grated turmeric root instead.
Gelatin
- 4 tablespoons unflavored gelatin powder
This creates a soft but stable gummy texture.
Water
- 1/2 cup water
Used to bloom and dissolve the gelatin.

These additions are optional but highly recommended.
Ginger
- 1 teaspoon freshly grated ginger
Adds warmth and freshness.
Black Pepper
- 1 tiny pinch black pepper
Black pepper is often paired with turmeric.
Use only a tiny amount so it does not overpower the gummies.
Lemon Zest
- 1 teaspoon finely grated lemon zest
Makes the lemon flavor much brighter.
Vanilla
- 1/4 teaspoon vanilla extract
Softens the earthy notes.
Choosing the Right Gelatin
Different gelatin brands create slightly different textures.
For Softer Gummies
Use:
- 3 tablespoons gelatin
For Firm Chewy Gummies
Use:
- 5 tablespoons gelatin
The recipe’s recommended 4 tablespoons creates a balanced texture.
Step 1 — Prepare the Lemon Juice
Wash and dry the lemons thoroughly.
Roll them gently on the countertop before cutting. This helps release more juice.
Cut the lemons in half and squeeze until you have:
- 1/2 cup fresh lemon juice
Remove seeds.
For a smoother gummy texture, strain the juice through a fine strainer.
Set aside.
Step 2 — Bloom the Gelatin
Blooming gelatin is one of the most important steps.
If skipped, the gummies may become grainy or lumpy.
How to Bloom Properly
Pour:
- 1/2 cup water
into a bowl.
Slowly sprinkle:
- 4 tablespoons gelatin
over the water.
Do not dump it all in one pile.
Sprinkle gradually and evenly.
Leave it undisturbed for:
- 5 to 10 minutes
The gelatin will absorb water and become thick and jelly-like.
This process is called blooming.
Step 3 — Prepare the Honey Lemon Turmeric Base
Place a small saucepan over low heat.
Add:
- Lemon juice
- Honey
- Turmeric
- Ginger if using
- Lemon zest if using
- Black pepper if using
Whisk continuously.
Heat gently for:
- 3 to 5 minutes
Important:
Do not boil the mixture.
High heat can affect flavor and texture.
You only want the mixture warm and smooth.
Step 4 — Add the Bloomed Gelatin
Once the honey mixture is warm:
Add the bloomed gelatin to the saucepan.
Whisk continuously over low heat.
Continue whisking until:
- The gelatin fully dissolves
- The liquid becomes smooth
- No lumps remain
This usually takes:
- 3 to 4 minutes
Again, avoid boiling.
Step 5 — Strain the Mixture
Turmeric and ginger can leave small particles.
For silky smooth gummies:
Pour the warm mixture through a fine mesh strainer into a clean bowl.
Press gently with a spoon if needed.
This creates a cleaner texture and more attractive gummies.
Step 6 — Fill the Molds
Place silicone molds on a flat tray or cutting board.
Carefully pour the gummy mixture into molds using:
- A dropper
- Small spoon
- Measuring cup with spout
Work fairly quickly because gelatin begins setting as it cools.
Fill each mold almost to the top.
If bubbles appear:
Tap the tray gently on the counter.
Step 7 — Chill Until Firm
Transfer molds carefully to the refrigerator.
Chill for:
- 2 to 3 hours
The gummies should become:
- Firm
- Bouncy
- Easy to remove
Do not freeze them during initial setting.
Step 8 — Remove Gummies from Molds
Once fully chilled:
Gently peel gummies from silicone molds.
If using a tray instead of molds:
Cut into squares using a sharp knife.
Texture Guide
If Gummies Are Too Soft
Possible reasons:
- Not enough gelatin
- Too much liquid
- Insufficient chilling
Solution:
Re-melt gently and add more dissolved gelatin.
If Gummies Are Too Firm
Possible reasons:
- Too much gelatin
- Excess chilling
Solution:
Reduce gelatin slightly next time.
Storage Instructions
Refrigerator
Store gummies in an airtight container.

Freezer
Freeze for:
