Chocolate – Filled Coconut Bites

Ingredients

For the Coconut Dough

  • 2 cups (160 g) shredded sweetened or unsweetened coconut
  • 1/2 cup (100 g) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Optional: 1–2 tablespoons powdered sugar for extra sweetness


For the Chocolate Filling

  • 50–75 g dark, milk, or semi-sweet chocolate
  • Alternatively, chocolate chips or small chocolate bars

Optional Coating

  • 1/2 cup shredded coconut (to roll the bites in)
  • 2 tablespoons powdered sugar (optional)

Equipment Needed

  • Mixing bowl
  • Spoon or spatula
  • Baking tray
  • Parchment paper
  • Small cookie scoop or tablespoon
  • Microwave-safe bowl (for melting chocolate)

Preparation Steps

Step 1: Prepare the Coconut Dough

  1. In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt.
  2. Mix thoroughly until it forms a sticky, cohesive dough.

Tip: If dough feels too wet, add 1–2 tablespoons more coconut. If too dry, add 1–2 teaspoons of condensed milk.


Step 2: Melt the Chocolate

  1. Break chocolate into small pieces and place in a microwave-safe bowl.
  2. Microwave in 20-second intervals, stirring in between, until smooth.
  3. Let the chocolate cool slightly but remain pourable.

Step 3: Form the Bites

  1. Scoop about 1 tablespoon of coconut dough.
  2. Flatten it slightly in your palm.
  3. Place a small piece of chocolate in the center.
  4. Fold the coconut dough over the chocolate and roll into a ball, fully enclosing the chocolate.

Tip: Work quickly if chocolate is melting in your hands.


Step 4: Optional Coating

  1. Roll the coconut balls in extra shredded coconut or a mix of coconut and powdered sugar.
  2. Press lightly so the coating sticks.

Step 5: Baking Option (Optional)

  1. Preheat oven to 175°C (350°F).
  2. Line a baking tray with parchment paper.
  3. Place coconut balls on the tray, leaving space between them.
  4. Bake for 10–12 minutes until lightly golden.
  5. Remove and let cool completely; chocolate will remain soft inside.

Note: Baking is optional—no-bake version works perfectly as long as the chocolate is enclosed.


Step 6: No-Bake Option

  1. Place formed bites on a tray lined with parchment.
  2. Refrigerate for 30–60 minutes to firm up before serving.

Step 7: Serve

  1. Serve chilled or at room temperature.
  2. Store leftovers in an airtight container in the refrigerator for up to 5 days.

Tips for Success

  • Use sweetened condensed milk for chewy texture; coconut cream can work for dairy-free.
  • For extra flavor, add 1/4 teaspoon almond extract or orange zest.
  • Mini chocolate pieces prevent bites from breaking or oozing out.
  • Work in small batches if the chocolate melts too fast in your hands.

Variations

  • Nutty version: Add a small almond or pecan inside along with chocolate.
  • Dark chocolate coconut bites: Use 70% dark chocolate for a richer taste.
  • Drizzle topping: Melt extra chocolate and drizzle on top for decoration.
  • Cocoa coconut: Mix 1 tablespoon cocoa powder into the coconut dough for chocolate-flavored bites
