Ingredients (Serves 3–4)
Main Ingredients
- 2 large boneless, skinless chicken breasts
(about 1.5 pounds total) - ½ cup mayonnaise
(full-fat gives the best texture, but light works too) - ½ cup grated Parmesan cheese
(freshly grated is best, but pre-grated works) - 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon salt
(adjust to taste) - ½ teaspoon black pepper
Optional Flavor Boosters
- ½ teaspoon Italian seasoning
- ½ teaspoon dried parsley
- ½ teaspoon mustard powder
- ½ teaspoon lemon juice (adds brightness)
Equipment Needed
- Air fryer
- Cutting board
- Sharp knife
- Mixing bowl
- Spoon or spatula
- Meat thermometer (recommended but optional)
Step-by-Step Instructions
Step 1: Prepare the Chicken
- Place the chicken breasts on a cutting board.
- If they are very thick, slice them horizontally to create thinner cutlets.
This helps them cook evenly and stay tender. - Pat the chicken dry with paper towels.
Dry chicken helps the topping stick better.
Set the chicken aside.
Step 2: Make the Creamy Topping
In a mixing bowl, combine:
- Mayonnaise
- Parmesan cheese
- Garlic powder
- Onion powder
- Paprika
- Salt
- Black pepper
Mix thoroughly until smooth and evenly combined.
The mixture should be thick but spreadable.
Step 3: Coat the Chicken
- Lay the chicken pieces flat.
- Spoon the mixture generously on top of each piece.
- Spread it evenly from edge to edge.
- The coating should fully cover the top but does not need to go underneath.
Do not flip the chicken after coating.
Step 4: Preheat the Air Fryer
Preheat the air fryer to 375°F (190°C) for 3 to 5 minutes.
Preheating helps the chicken start cooking immediately and evenly.
Step 5: Air Fry the Chicken
- Place the chicken in the air fryer basket in a single layer.
- Do not overcrowd. Cook in batches if needed.
- Cook at 375°F (190°C) for 14 to 18 minutes, depending on thickness.
There is no need to flip the chicken.
Step 6: Check for Doneness
The chicken is done when:
- The internal temperature reaches 165°F (74°C)
- The topping is lightly golden
- The chicken feels firm but not hard
If needed, cook for an additional 1–2 minutes.
Step 7: Rest Before Serving
Remove the chicken from the air fryer and let it rest for 5 minutes.
This allows the juices to redistribute and keeps the chicken moist
