Dry Ingredients:
- 1 ½ cups gluten-free all-purpose flour (make sure it contains xanthan gum; if not, add 1 teaspoon)
- ½ cup almond flour or oat flour (adds moisture and texture)
- 2 tablespoons sugar or honey
- 1 teaspoon salt
- 1 tablespoon baking powder (optional for extra rise)
- 1 teaspoon instant yeast (for slightly lighter texture)
Wet Ingredients:
- 1 cup warm water (about 110°F / 43°C)
- 2 large eggs, at room temperature
- ¼ cup olive oil, melted butter, or coconut oil
- 1 teaspoon apple cider vinegar (helps with rising)
Optional Add-Ins:
- 1–2 tablespoons seeds (chia, flax, sunflower)
- 1 teaspoon herbs (rosemary, thyme, or oregano)

- Air fryer with a basket or small loaf pan that fits inside

Instructions
Step 1: Prepare the Yeast
- Pour warm water into a small bowl.
- Add sugar and yeast, stir lightly.
- Let it sit for 5–10 minutes until foamy. This ensures your yeast is active.
Step 2: Mix Dry Ingredients
- In a large bowl, combine gluten-free flour, almond or oat flour, salt, and baking powder (if using).
- Whisk well to evenly distribute the ingredients.
Step 3: Combine Wet Ingredients
- In a separate bowl, whisk eggs, oil, and apple cider vinegar until smooth.
- Add the foamy yeast mixture and mix thoroughly.
Step 4: Make the Dough
- Gradually add the wet mixture to the dry ingredients.
- Stir using a spatula or spoon until a thick, sticky batter forms. Gluten-free bread dough will be more batter-like than traditional bread dough.
- If desired, fold in seeds or herbs at this stage.
Step 5: First Rise
- Lightly grease a small loaf pan that fits your air fryer.
- Pour the dough into the pan, smoothing the top gently with a spatula.
- Cover loosely with a clean towel or plastic wrap.
- Let it rise in a warm, draft-free area for 30–45 minutes. It should puff slightly but may not double in size.
Step 6: Preheat the Air Fryer
- Preheat your air fryer to 350°F (175°C) for 5 minutes.
- If your air fryer tends to blow heat unevenly, consider lining the basket with parchment paper.
Step 7: Air Fry the Bread
- Place the loaf pan carefully in the air fryer basket.
- Cook at 350°F (175°C) for 25–30 minutes.
- After 20 minutes, check the top—if it browns too quickly, cover loosely with foil.
- Insert a toothpick or skewer in the center; it should come out clean when fully baked.
Step 8: Cool the Bread
- Remove the pan from the air fryer and let it sit for 5–10 minutes.
- Carefully lift the bread out of the pan and place on a wire rack to cool completely.
- Allowing it to cool fully prevents a gummy texture, which can happen with gluten-free bread.
Step 9: Slice and Serve
- Slice with a serrated knife for best results.
- Serve plain, toasted, or with your favorite spreads.
- Store leftovers in an airtight container at room temperature for 2–3 days, or freeze for longer storage.
Tips for Success:
- Moisture matters: Gluten-free bread can dry out quickly. Make sure not to overcook.
- Check your flours: Some gluten-free blends behave differently; adjust water slightly if dough seems too dry or too wet.
- Add structure: Eggs and xanthan gum help hold the bread together. Don’t skip them unless you want a very dense loaf.
- Experiment with flavors: Herbs, seeds, or a small amount of cheese can make a simple loaf much more interesting.
