Preparation Steps
Step 1: Prepare the Coconut Dough
- In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt.
- Mix thoroughly until it forms a sticky, cohesive dough.
Tip: If dough feels too wet, add 1–2 tablespoons more coconut. If too dry, add 1–2 teaspoons of condensed milk.
Step 2: Melt the Chocolate
- Break chocolate into small pieces and place in a microwave-safe bowl.
- Microwave in 20-second intervals, stirring in between, until smooth.
- Let the chocolate cool slightly but remain pourable.
Step 3: Form the Bites
- Scoop about 1 tablespoon of coconut dough.
- Flatten it slightly in your palm.
- Place a small piece of chocolate in the center.
- Fold the coconut dough over the chocolate and roll into a ball, fully enclosing the chocolate.
Tip: Work quickly if chocolate is melting in your hands.
Step 4: Optional Coating
- Roll the coconut balls in extra shredded coconut or a mix of coconut and powdered sugar.
- Press lightly so the coating sticks.
Step 5: Baking Option (Optional)
- Preheat oven to 175°C (350°F).
- Line a baking tray with parchment paper.
- Place coconut balls on the tray, leaving space between them.
- Bake for 10–12 minutes until lightly golden.
- Remove and let cool completely; chocolate will remain soft inside.
Note: Baking is optional—no-bake version works perfectly as long as the chocolate is enclosed.
Step 6: No-Bake Option
- Place formed bites on a tray lined with parchment.
- Refrigerate for 30–60 minutes to firm up before serving.
Step 7: Serve
- Serve chilled or at room temperature.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
