Layer 2: Taco Beef
- 450 g ground beef
- 1 tablespoon olive oil
- 1 tablespoon sugar-free taco seasoning
- 2 tablespoons water
Layer 3: Sour Cream
- 1 1/2 cups full-fat sour cream
Layer 4: Guacamole
- 2 ripe avocados
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1 tablespoon finely chopped cilantro
- 1 tablespoon finely diced red onion (optional)
Layer 5: Cheese
- 1 1/2 cups shredded cheddar or Mexican blend cheese
Layer 6: Fresh Vegetables
- 1/2 cup diced tomatoes, seeds removed
- 1/4 cup finely diced green onion
- 1/4 cup diced jalapeño (optional)
Layer 7: Topping
- 1/3 cup sliced black olives
- Optional: chopped cilantro or parsley
Step 1: Prepare the Taco Beef
- Heat olive oil in a skillet over medium heat.
- Add ground beef and cook until fully browned, breaking it into small crumbles.
- Drain excess fat if needed.
- Stir in taco seasoning and water.
- Simmer for 2–3 minutes until thick and well coated.
- Remove from heat and allow to cool completely.
Cooling prevents melting the layers above it.
Step 2: Make the Cream Cheese Base
- In a bowl, combine softened cream cheese and sour cream.
- Add taco seasoning and lime juice.
- Mix until completely smooth and spreadable.
This layer replaces refried beans and provides richness and structure.
Step 3: Prepare Remaining Layers
- Mash avocados with lime juice, salt, cilantro, and onion until slightly chunky.
- Dice vegetables finely to keep the dip scoopable.
- Shred cheese if not pre-shredded for better texture.
Step 4: Assemble the Dip
Use a clear glass dish for visual layers if desired.
- Spread the seasoned cream cheese evenly on the bottom.
- Layer cooled taco beef over the cream cheese.
- Spread sour cream gently over the beef.
- Add guacamole and smooth lightly.
- Sprinkle shredded cheese evenly.
- Scatter tomatoes, green onions, and jalapeños.
- Finish with olives and herbs.
Step 5: Chill and Serve
- Cover and refrigerate for at least 30 minutes before serving.
- This allows layers to firm up and flavors to blend.
