Garlic Butter cottage cheese Bread stick

Ingredients

For the Breadstick Dough

  • 1 cup cottage cheese (full-fat gives the best texture, but low-fat works)
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese

For the Garlic Butter Topping

  • 4 tablespoons unsalted butter
  • 3 to 4 cloves garlic, finely minced
  • 1 tablespoon fresh parsley, finely chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: extra parmesan for topping

Equipment Needed

  • Blender or food processor
  • Large mixing bowl
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper
  • Small saucepan or microwave-safe bowl
  • Pastry brush

Step 1: Prepare the Cottage Cheese Base

Add the cottage cheese and egg to a blender or food processor. Blend until completely smooth, with no visible curds remaining. This step is crucial for a smooth dough and even texture in the final breadsticks.

Set the blended mixture aside.


Step 2: Mix the Dry Ingredients

In a large mixing bowl, combine the flour, baking powder, salt, garlic powder, and onion powder. Whisk well so the baking powder is evenly distributed. This ensures consistent rise and prevents uneven texture.


Step 3: Form the Dough

Pour the blended cottage cheese mixture into the bowl with the dry ingredients. Using a spatula or wooden spoon, mix until a shaggy dough forms.

Add the shredded mozzarella and grated parmesan. Continue mixing until the dough comes together into a soft, slightly sticky ball. If the dough feels overly wet, add one tablespoon of flour at a time until workable.


Step 4: Rest the Dough

Let the dough rest for 5 minutes. This allows the flour to hydrate and makes shaping easier. During this time, preheat your oven to 375°F (190°C).

Line a baking sheet with parchment paper.


Step 5: Shape the Breadsticks

Lightly flour your hands. Divide the dough into 8 to 10 equal portions, depending on how thick you want your breadsticks.

Roll each portion between your palms or on a lightly floured surface into a long rope, about 6 to 8 inches long. Place each breadstick on the prepared baking sheet, leaving space between them.


Step 6: Bake

Place the baking sheet in the preheated oven and bake for 14 to 18 minutes, or until the breadsticks are lightly golden on top and set in the center.

For extra browning, you can broil for 1 to 2 minutes at the end, watching closely to avoid burning.


Step 7: Prepare the Garlic Butter

While the breadsticks bake, melt the butter in a small saucepan over low heat or in the microwave.

Add the minced garlic, salt, and black pepper. Heat gently for 1 to 2 minutes until the garlic becomes fragrant but not browned. Remove from heat and stir in the chopped parsley.


Step 8: Finish the Breadsticks

As soon as the breadsticks come out of the oven, generously brush them with the warm garlic butter. Make sure to coat the tops and sides for maximum flavor.

If desired, sprinkle with extra parmesan while still warm so it melts slightly.


Serving Suggestions

Serve warm on their own, or pair with marinara sauce, creamy garlic dip, ranch, or a simple olive oil and balsamic mix. These breadsticks also work well alongside soups, salads, or pasta dishes.
