Ingredients
For the Marinade
• 1 lb chicken tenders or sliced chicken breast
• 1/3 cup Greek yogurt
• 2 tablespoons olive oil
• Zest of 1 lemon
• 2 tablespoons lemon juice
• 3 cloves garlic, finely minced
• 1 teaspoon dried oregano
• 1/2 teaspoon paprika
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
For the Crispy Coating
• 1 cup panko breadcrumbs
• 1/3 cup grated parmesan cheese
• 1 teaspoon dried oregano
• 1/2 teaspoon garlic powder
• 1/2 teaspoon paprika
• Salt and pepper to taste

• Olive oil spray or drizzle
Instructions
Step 1: Marinate the Chicken
In a large bowl, mix Greek yogurt, olive oil, lemon zest, lemon juice, garlic, oregano, paprika, salt, and pepper. Add the chicken tenders and toss until fully coated. Cover and marinate for at least 30 minutes, or up to 12 hours for deeper flavor.
Step 2: Prepare the Coating
In a shallow bowl, combine panko breadcrumbs, parmesan, oregano, garlic powder, paprika, salt, and pepper. Mix well so the seasoning is evenly distributed.
Step 3: Bread the Chicken
Remove each chicken tender from the marinade, allowing excess to drip off. Press firmly into the breadcrumb mixture, coating all sides well. Place on a plate or rack while you finish the rest.
Step 4: Cook the Chicken
Oven Method
Preheat oven to 425°F (220°C). Place tenders on a lined baking sheet and lightly spray or drizzle with olive oil. Bake for 18–22 minutes, flipping halfway, until golden brown and cooked through.
Air Fryer Method
Preheat air fryer to 400°F (200°C). Arrange tenders in a single layer and spray lightly with oil. Cook for 10–12 minutes, flipping halfway, until crispy and internal temperature reaches 165°F (74°C).
Pan-Fry Method
Heat a shallow layer of olive oil in a skillet over medium heat. Cook tenders for 3–4 minutes per side until golden and cooked through. Transfer to a paper towel-lined plate.
