 Keto Cinnamon Rolls

Ingredients

Dough

  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 1 1/2 cups almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 tablespoons powdered erythritol or other keto sweetener
  • 1 teaspoon vanilla extract

Cinnamon Filling

  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons powdered erythritol
  • 1 tablespoon ground cinnamon

Optional Cream Cheese Glaze

  • 2 ounces cream cheese, softened
  • 1 tablespoon butter, softened
  • 2 tablespoons powdered erythritol
  • 1/2 teaspoon vanilla extract

Prep time: 15–20 minutes
Bake time: 12–15 minutes
Total time: 35–40 minutes


Step-by-Step Instructions

Step 1: Preheat Oven

Preheat oven to 375°F (190°C).
Line a baking sheet with parchment paper.


Step 2: Melt Cheese for Dough

In a microwave-safe bowl, combine:

  • Mozzarella cheese
  • Cream cheese

Microwave for 60 seconds, stir, then microwave 20–30 seconds more until fully melted and smooth.


Step 3: Form the Dough

Add to melted cheese:

  • Almond flour
  • Coconut flour
  • Baking powder
  • Salt
  • Eggs
  • Sweetener
  • Vanilla extract

Mix thoroughly until a sticky dough forms. Knead with oiled hands until smooth. If too stiff, microwave 10 seconds to soften.


Step 4: Roll Out Dough

Place dough between two sheets of parchment paper. Roll into a rectangle approximately 8×10 inches.


Step 5: Add Cinnamon Filling

  1. Brush melted butter over the dough rectangle.
  2. Mix erythritol and cinnamon, then sprinkle evenly over the buttered dough.

Step 6: Roll and Slice

  1. Carefully roll the dough into a log, starting from one long edge.
  2. Slice into 6–8 equal rolls using a sharp knife or dental floss.
  3. Place rolls cut-side up on prepared baking sheet.

Step 7: Bake

Bake for 12–15 minutes until lightly golden.


Step 8: Optional Cream Cheese Glaze

  1. Mix cream cheese, butter, erythritol, and vanilla until smooth.
  2. Drizzle over warm rolls.
