Air Fryer Ham & cheese puff pastry

Ingredients

Main Ingredients

  • 1 sheet puff pastry, thawed according to package instructions
  • 4 to 6 slices ham (thin or medium thickness)
  • 1 to 1½ cups cheese, shredded or sliced
    • Cheddar, Swiss, mozzarella, Gruyère, or a blend all work well

Egg Wash (Optional but Recommended)

  • 1 large egg
  • 1 tablespoon milk or water

Optional Flavor Additions

  • 1 teaspoon Dijon or whole-grain mustard
  • Black pepper to taste
  • Dried herbs such as thyme or oregano
  • A small amount of honey or hot sauce for contrast

Equipment Needed

  • Air fryer
  • Parchment paper or air fryer liner
  • Sharp knife or pizza cutter
  • Pastry brush (optional)
  • Fork for sealing edges

Preparation Steps

Step 1: Thaw the Puff Pastry Properly

Remove the puff pastry from the freezer and allow it to thaw in the refrigerator for several hours or at room temperature for about 30 to 40 minutes.

The pastry should be cold but flexible. If it becomes too warm, it may tear or lose its ability to puff properly. If this happens, place it back in the refrigerator for a few minutes.


Step 2: Prepare the Filling

Lay out your ham slices and cheese so they are ready to assemble quickly. If using sliced cheese, cut it to fit neatly inside the pastry without overhanging too much.

If you plan to use mustard or seasonings, keep them nearby. Puff pastry benefits from quick assembly to keep it cold.


Assembly Instructions

Step 3: Roll and Cut the Puff Pastry

Lightly flour your work surface if needed. Roll the puff pastry just enough to smooth seams or thin it slightly.

Cut the sheet into:

  • Squares for hand pies
  • Rectangles for turnovers
  • Strips for twists or pinwheels

Common sizes are 4 x 4 inches or 4 x 6 inches.


Step 4: Add the Filling

Place ham on one half of each pastry piece, leaving a border of about ½ inch around the edges.

Add cheese on top of the ham. Avoid overfilling, as too much cheese can leak out during cooking.

If using mustard or seasoning, spread a thin layer on the pastry before adding the ham.


Step 5: Seal the Pastries

Fold the pastry over the filling.

Press the edges gently with your fingers, then seal firmly with a fork. This prevents the filling from escaping and helps the pastry hold its shape.

If desired, lightly score the top with a knife to allow steam to escape.


Step 6: Apply Egg Wash

Whisk the egg with milk or water.

Brush a thin layer over the tops of the pastries. This step improves browning and gives a glossy finish, but it can be skipped if preferred.


Air Frying Instructions

Step 7: Preheat the Air Fryer

Preheat the air fryer to 350°F (175°C) for 3 to 5 minutes.

Preheating ensures even puffing and crispness.


Step 8: Prepare the Basket

Line the air fryer basket with parchment paper or a liner.

Arrange the pastries in a single layer with space between them. Do not overcrowd. Cook in batches if necessary.


Step 9: Air Fry

Air fry at 350°F (175°C) for 8 to 12 minutes.

At around 6 minutes, check for browning. Flip gently if needed, depending on your air fryer model.

The pastries are done when:

  • They are golden brown
  • The pastry has puffed fully
  • Cheese is melted inside

Cooling and Serving

Step 10: Rest Before Serving

Remove pastries carefully and place them on a rack or plate.

Allow them to rest for 3 to 5 minutes. The filling will be extremely hot immediately after cooking.


Serving Suggestions

  • Serve plain or with dipping sauces such as honey mustard, cheese sauce, or marinara
  • Pair with a green salad for a light meal
  • Serve alongside soup for a hearty lunch
  • Cut into smaller pieces for party appetizers
