Ingredients (For a 6-inch / 15 cm cake)
Wet Ingredients
- 2 large eggs, room temperature
- ½ cup plain yogurt (120 g)
Use full-fat or regular yogurt for best texture. - ⅓ cup sugar (70 g)
White or light brown sugar both work. - ¼ cup oil (60 ml)
Use vegetable, sunflower, or canola oil. - 1 teaspoon vanilla extract
Dry Ingredients
- 1 cup all-purpose flour (120 g)
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
Optional Additions
- Lemon or orange zest
- Chocolate chips
- Chopped nuts
- Blueberries or raisins
Equipment Needed
- Mixing bowls
- Whisk or fork
- Rubber spatula
- 6-inch cake pan that fits your air fryer
- Parchment paper
- Air fryer
Preparation
Step 1: Prepare the Pan
- Line the bottom of the cake pan with parchment paper.
- Lightly grease the sides with oil.
- Set aside.
Using parchment helps the cake release easily.
Make the Batter
Step 2: Mix Wet Ingredients
- In a large bowl, crack in the eggs.
- Add sugar and whisk until slightly pale.
- Add yogurt, oil, and vanilla.
- Whisk until smooth and well combined.
The mixture should look creamy and uniform.
Step 3: Add Dry Ingredients
- In another bowl, mix flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture.
- Fold gently with a spatula until just combined.
Do not overmix. Stop as soon as you no longer see dry flour.
Step 4: Add Optional Ingredients
If using fruit, nuts, or chocolate:
- Gently fold them in at this stage.
Baking in the Air Fryer
Step 5: Fill the Pan
- Pour the batter into the prepared pan.
- Smooth the top gently.
- Tap the pan lightly on the counter to remove air bubbles.
Step 6: Air Fry
- Preheat the air fryer to 160°C (320°F) for 3–5 minutes.
- Place the cake pan into the air fryer basket.
- Bake at 160°C (320°F) for 30–35 minutes.
Check at 30 minutes:
- Insert a toothpick in the center.
- If it comes out clean or with a few crumbs, the cake is done.
- If wet, cook for another 3–5 minutes.
If the top browns too fast, loosely cover with foil.
Cooling the Cake
Step 7: Cool Properly
- Remove the pan from the air fryer.
- Let the cake cool in the pan for 10 minutes.
- Run a knife around the edge.
- Turn out and cool completely on a rack.
Cooling helps the cake set and improves texture
