Ingredients

Dough

  • 1 1/2 cups shredded low-moisture mozzarella
  • 2 tablespoons cream cheese
  • 3/4 cup fine blanched almond flour
  • 1 large egg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder (optional for flavor)

Baking Soda Bath (for classic pretzel flavor)

  • 4 cups water
  • 2 tablespoons baking soda

Topping

  • 1 egg (for egg wash)
  • 1 tablespoon water
  • 1–2 tablespoons coarse salt

Optional:

  • Melted butter for brushing after baking

Step-by-Step Instructions

Step 1: Preheat Oven

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper.


Step 2: Melt the Cheese

In a microwave-safe bowl, combine:

  • Mozzarella
  • Cream cheese

Microwave for 60 seconds.

Stir thoroughly.

Microwave an additional 20–30 seconds if needed until fully melted and smooth.

The cheese should be stretchy but not browned.


Step 3: Form the Dough

Add to melted cheese:

  • Almond flour
  • Baking powder
  • Garlic powder (optional)
  • Egg

Mix quickly while cheese is warm.

Knead with hands until smooth dough forms.

If dough becomes stiff, microwave 10–15 seconds to soften.


Step 4: Shape the Pretzel Bites

Divide dough into 4 equal portions.

Roll each portion into a rope about 1 inch thick.

Cut into bite-sized pieces (about 1-inch sections).

Place on parchment-lined baking sheet.


Step 5: Baking Soda Bath (Optional but Recommended)

The baking soda bath gives pretzels their classic flavor and darker crust.

Bring water to gentle simmer.

Stir in baking soda.

Drop dough pieces into water for 20–30 seconds.

Remove with slotted spoon.

Return to baking sheet.

Do not overcrowd water.


Step 6: Egg Wash and Salt

Whisk egg with 1 tablespoon water.

Brush each bite lightly.

Sprinkle with coarse salt.


Step 7: Bake

Bake for 12–15 minutes until:

  • Golden brown
  • Firm on outside
  • Slightly puffed

For extra browning, broil 1–2 minutes at end.


Step 8: Optional Butter Finish

Brush warm pretzel bites with melted butter for richer flavor.
