Keto Garlic Butter Roasted Cabbage Slices

Ingredients (Serves 4–6)

Main Ingredients

  • 1 large green cabbage (about 2–2.5 pounds)
  • 6 tablespoons unsalted butter, melted
  • 4–6 cloves fresh garlic, finely minced
  • 1 teaspoon sea salt (adjust to taste)
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon smoked paprika (optional but recommended)
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil (optional for extra crispness)

Optional Garnishes

  • Fresh chopped parsley
  • Grated Parmesan cheese (keto-friendly in moderation)
  • Red pepper flakes
  • Fresh thyme or rosemary

Choosing the Right Cabbage

Green cabbage works best for this recipe because:

  • It holds its shape when sliced into thick rounds
  • It caramelizes beautifully
  • It has a mild flavor that absorbs garlic butter well

Look for:

  • A firm, dense head
  • Crisp, tightly packed leaves
  • No brown spots or soft areas
  • Bright green outer leaves

Avoid cabbage that feels light for its size or has wilted leaves.

Preparation time: 15 minutes
Cooking time: 30–40 minutes
Total time: About 55 minutes


Step 1: Preheat the Oven Properly

Preheat your oven to 400°F (200°C).

A fully preheated oven is crucial because it allows immediate caramelization rather than steaming the cabbage.

Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.

Use a heavy baking sheet if possible. Thin pans may cause uneven browning.


Step 2: Prepare the Cabbage Slices

  1. Remove any damaged outer leaves.
  2. Rinse the cabbage under cold water.
  3. Pat completely dry with paper towels.

Dry cabbage is important. Excess moisture prevents proper browning.

  1. Trim the stem slightly but keep the core intact. The core holds slices together during roasting.
  2. Slice the cabbage vertically into 3/4-inch to 1-inch thick rounds.

Do not slice too thin. Thin slices will fall apart and become too soft.

Place the slices gently onto the baking sheet in a single layer without overlapping.


Step 3: Prepare the Garlic Butter Mixture

In a small bowl, combine:

  • Melted butter
  • Minced garlic
  • Salt
  • Black pepper
  • Smoked paprika
  • Onion powder

Stir thoroughly to distribute the garlic evenly.

If using olive oil for extra crispness, whisk it into the butter mixture.

Let the mixture sit for 2–3 minutes to allow the garlic flavor to infuse.


Step 4: Season the Cabbage Generously

Using a pastry brush, coat each cabbage slice generously with the garlic butter mixture.

Be sure to:

  • Brush into the layers
  • Coat edges well
  • Flip slices carefully and brush the other side

Reserve a small amount of butter for mid-roast basting.


Step 5: Roast to Perfection

Place the baking sheet in the center rack of the oven.

Roast for 20 minutes.

After 20 minutes:

  • Remove from oven
  • Carefully flip each slice using a wide spatula
  • Brush with remaining garlic butter

Return to oven and roast an additional 15–20 minutes.

The cabbage is done when:

  • Edges are golden brown and crispy
  • Centers are tender when pierced with a fork
  • Natural sugars have caramelized

For extra browning, broil for 2–3 minutes at the end. Watch carefully to avoid burning.

If they are soggy, likely causes include:

  • Oven not hot enough
  • Too much moisture
  • Overcrowded pan
