Cheese Garlic Bread

Ingredients

The Bread

  • 1 large loaf French bread or Italian bread
    • Not too soft, not too crusty

Garlic Butter

  • 1/2 cup unsalted butter, softened
  • 4 to 6 cloves garlic, finely minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese Layer

  • 1 1/2 cups shredded mozzarella
  • 1/2 cup shredded cheddar
  • 1/4 cup grated parmesan

Optional Flavor Boosters

  • 1 tablespoon fresh parsley, finely chopped
  • Pinch of red chili flakes

Step 1: Prepare the Oven and Pan

  1. Preheat oven to 200°C (400°F).
  2. Line a baking tray with parchment paper or foil.

Step 2: Prepare the Garlic Butter

  1. Place softened butter in a bowl.
  2. Add minced garlic, olive oil, salt, and black pepper.
  3. Mix until smooth and evenly combined.

Letting the garlic sit in butter for a few minutes softens the sharpness.


Step 3: Prepare the Bread

  1. Slice the loaf lengthwise.
  2. Place both halves cut-side up on the baking tray.

Step 4: Spread the Garlic Butter

  1. Spread garlic butter generously over the bread.
  2. Push butter all the way to the edges.
  3. Use the back of a spoon to press it into the bread.

Do not rush this. This step decides everything.


Step 5: Add the Cheese

  1. Sprinkle mozzarella evenly over both halves.
  2. Add cheddar for depth.
  3. Finish with parmesan.

Make sure cheese reaches the edges for crisp corners.


Step 6: Bake (Two-Stage Method)

Stage One: Melt and Soften

  • Bake for 8 to 10 minutes, until cheese melts and bread warms through.

Stage Two: Brown and Crisp

  • Switch oven to broil (grill).
  • Broil for 2 to 4 minutes, watching closely.

Remove when cheese is bubbly and lightly golden.


Step 7: Finish and Rest

  1. Remove from oven.
  2. Sprinkle parsley and chili flakes if using.
  3. Let rest for 2 minutes.
  4. Slice and serve.

Done right, this garlic bread should:

  • Crunch slightly when bitten
  • Pull apart with cheese stretch
  • Smell aggressively garlicky
  • Stay soft inside

Storage and Reheating

  • Best eaten fresh
  • Refrigerate leftovers up to 2 days

Slice bread before baking but keep loaf intact
