Air Fryer crustless quiche

INGREDIENTS

Base Ingredients
• 6 large eggs
• 1 cup milk (whole milk gives the creamiest texture, but low-fat works)
• 1 cup shredded cheese (cheddar, mozzarella, Swiss, or a mix)
• 2 tablespoons butter or oil (for greasing and sautéing)
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper

Vegetables (choose 1 to 3 cups total)
• Onion, finely chopped
• Bell pepper, diced
• Spinach, chopped
• Zucchini, grated and squeezed dry
• Mushrooms, sliced
• Broccoli, finely chopped

Optional Protein (up to 1 cup total)
• Cooked bacon, crumbled
• Cooked ham, diced
• Cooked chicken, shredded
• Cooked sausage, crumbled

Optional Seasonings
• Garlic powder or minced garlic
• Paprika
• Dried herbs such as thyme, oregano, or basil
• A pinch of nutmeg (optional, but enhances egg dishes)

EQUIPMENT NEEDED

• 9-inch pie dish or baking dish
• Mixing bowl
• Whisk or fork
• Frying pan
• Cutting board and knife

PREPARATION STEPS
────────────────────────────

Step 1: Prepare the Oven and Dish
Preheat your oven to 180°C / 350°F.
Grease the pie dish thoroughly with butter or oil. Make sure the bottom and sides are well coated to prevent sticking.

Step 2: Cook the Vegetables
Heat a frying pan over medium heat. Add a small amount of butter or oil.
Add onions first and cook until soft and slightly golden.
Add remaining vegetables and cook until tender and any excess moisture has evaporated.
This step is important because raw vegetables release water and can make the quiche watery.
Remove from heat and let cool slightly.

Step 3: Prepare the Egg Mixture
In a large bowl, crack all the eggs.
Whisk until the yolks and whites are fully combined.
Add milk, salt, pepper, and any optional seasonings.
Whisk again until smooth and evenly mixed.

Step 4: Assemble the Quiche
Spread the cooked vegetables evenly across the greased dish.
Add any cooked meat if using.
Sprinkle shredded cheese evenly over the filling.
Slowly pour the egg mixture over everything, making sure it spreads evenly.

Step 5: Bake
Place the dish in the center of the oven.
Bake for 35 to 45 minutes.
The quiche is done when the center is set, the top is lightly golden, and a knife inserted comes out mostly clean.

Step 6: Rest Before Serving
Remove from the oven and allow the quiche to rest for 10 minutes.
This helps it firm up and makes slicing easier.

TEXTURE AND DONENESS TIPS

• If the quiche jiggles slightly in the center, it will continue cooking as it rests.
• Overbaking can make the eggs rubbery, so remove once just set.
• If the top browns too quickly, loosely cover with foil.
