- 2 cups cooked chicken, finely chopped or shredded
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 2 large eggs
- 1/3 cup all-purpose flour
- 2 tablespoons mayonnaise or sour cream
- 2 tablespoons finely chopped onion or green onion
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper

- 2 to 3 tablespoons oil (vegetable or olive oil)
Step 1: Prepare the Mixture
In a large mixing bowl, add the chopped chicken, shredded cheese, eggs, flour, mayonnaise or sour cream, onion, garlic powder, paprika, salt, and pepper.
Mix well until everything is evenly combined. The mixture should be thick and scoopable, not runny.
If it feels too loose, add 1 tablespoon of flour at a time until it holds together.
Step 2: Heat the Pan
Place a large skillet over medium heat and add the oil.
Allow the oil to heat fully before adding the fritters. This helps create a crisp exterior.
Step 3: Form and Cook the Fritters
Scoop about 2 tablespoons of the mixture and gently place it into the pan. Lightly flatten with the back of a spoon.
Cook for 3 to 4 minutes on the first side, until golden brown and set.
Flip carefully and cook for another 3 minutes, until the second side is golden and the cheese is melted inside.
Work in batches to avoid overcrowding the pan.
Step 4: Drain and Rest
Transfer the cooked fritters to a plate lined with paper towels.
Let them rest for a minute before serving. This helps them firm up and stay juicy.
